Ingredients

  • Silken tofu - 150 grams
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, shredded
  • Radish - 3 small, thinly sliced
  • Spinach - 100 grams, blanched and chopped
  • Sesame paste (tahini) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. In a mixing bowl, crumble the silken tofu until smooth.
  2. Add sesame paste, soy sauce, rice vinegar, and maple syrup to the tofu, and mix until well combined to create the dressing.
  3. In a separate bowl, combine the sliced cucumber, shredded carrot, sliced radish, and blanched spinach.
  4. Pour the tofu dressing over the mixed vegetables and gently toss until the vegetables are evenly coated.
  5. Sprinkle the toasted sesame seeds on top for garnish.
  6. Serve immediately or chill for 10 minutes before serving for a refreshing taste.
