Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 200 ml
  • Silken tofu - 100 grams
  • White miso paste - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Carrot - 1 small, grated
  • Cucumber - 1 small, finely chopped
  • Green onions - 2, finely chopped
  • Roasted sesame seeds - 1 tablespoon

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain well.
  2. In a pot, combine the rinsed rice and 200 ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the dressing by blending the silken tofu, white miso paste, rice vinegar, soy sauce, and sesame oil in a bowl until smooth.
  4. Once the rice is done, let it sit covered for an additional 10 minutes to steam.
  5. In a large bowl, combine the cooked rice, grated carrot, chopped cucumber, and green onions. Gently fold in the tofu dressing until everything is well coated.
  6. Serve the Shiraae Gohan in bowls, garnished with roasted sesame seeds on top.
