Ingredients
- Japanese short-grain rice - 150 grams
- Water - 200 ml
- Silken tofu - 100 grams
- White miso paste - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Soy sauce - 1 teaspoon
- Sesame oil - 1 teaspoon
- Carrot - 1 small, grated
- Cucumber - 1 small, finely chopped
- Green onions - 2, finely chopped
- Roasted sesame seeds - 1 tablespoon
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain well.
- In a pot, combine the rinsed rice and 200 ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the dressing by blending the silken tofu, white miso paste, rice vinegar, soy sauce, and sesame oil in a bowl until smooth.
- Once the rice is done, let it sit covered for an additional 10 minutes to steam.
- In a large bowl, combine the cooked rice, grated carrot, chopped cucumber, and green onions. Gently fold in the tofu dressing until everything is well coated.
- Serve the Shiraae Gohan in bowls, garnished with roasted sesame seeds on top.
