Ingredients

  • Silken tofu - 200 grams
  • White sesame seeds - 30 grams
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Grated carrot - 50 grams
  • Chopped cucumber - 50 grams
  • Chopped green onion - 1 tablespoon
  • Salt - to taste

Steps

  1. Toast the white sesame seeds in a dry skillet over medium heat for about 3-4 minutes until they are golden and fragrant, stirring occasionally to prevent burning.
  2. Once toasted, transfer the sesame seeds to a mortar and pestle or a food processor and grind them until they form a coarse paste.
  3. In a mixing bowl, combine the ground sesame seeds, soy sauce, rice vinegar, and maple syrup. Mix well to form a smooth dressing.
  4. Drain the silken tofu and gently crumble it into a bowl.
  5. Add the grated carrot, chopped cucumber, and chopped green onion to the bowl with the tofu.
  6. Pour the sesame dressing over the tofu and vegetables. Gently fold everything together until well combined. Be careful not to mash the tofu too much.
  7. Taste and adjust seasoning with salt if necessary.
  8. Serve immediately or refrigerate for up to an hour to allow the flavors to meld before serving.
