Ingredients

  • Salmon fillets - 2 x 150g
  • Sea salt - 1 teaspoon
  • Sake - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Lemon wedges - 2 for serving

Steps

  1. Pat the salmon fillets dry with a paper towel and place them in a shallow dish.
  2. Sprinkle sea salt evenly over the salmon fillets and let them sit for 15 minutes to draw out moisture.
  3. In a small bowl, mix together the sake and mirin, then pour the mixture over the salmon fillets.
  4. Cover the dish and marinate the salmon in the refrigerator for an additional 15 minutes.
  5. Preheat your grill or grill pan over medium-high heat.
  6. Remove the salmon from the marinade and discard the marinade.
  7. Grill the salmon fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has a nice char.
  8. Serve the grilled salmon garnished with chopped green onions and lemon wedges on the side.
