Ingredients

  • Sweetfish (Ayu) - 2 whole fish, cleaned and scaled
  • Sea salt - 1 tablespoon
  • Lemon - 1, sliced
  • Fresh shiso leaves - 4 leaves
  • Olive oil - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Rinse the sweetfish under cold water and pat dry with paper towels.
  3. Rub the inside and outside of each fish with sea salt, ensuring an even coating.
  4. Place 2 slices of lemon and 2 shiso leaves inside each fish.
  5. Drizzle olive oil over the fish and sprinkle black pepper to taste.
  6. Line a baking tray with parchment paper and place the fish on it.
  7. Bake in the preheated oven for 20 minutes or until the fish is golden brown and cooked through.
  8. Remove from the oven and let rest for 5 minutes before serving.
