Ingredients
- Sweetfish (Ayu) - 2 whole fish, cleaned and scaled
- Sea salt - 1 tablespoon
- Lemon - 1, sliced
- Fresh shiso leaves - 4 leaves
- Olive oil - 1 teaspoon
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Rinse the sweetfish under cold water and pat dry with paper towels.
- Rub the inside and outside of each fish with sea salt, ensuring an even coating.
- Place 2 slices of lemon and 2 shiso leaves inside each fish.
- Drizzle olive oil over the fish and sprinkle black pepper to taste.
- Line a baking tray with parchment paper and place the fish on it.
- Bake in the preheated oven for 20 minutes or until the fish is golden brown and cooked through.
- Remove from the oven and let rest for 5 minutes before serving.
