Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 200 milliliters
  • Sea salt - 1 teaspoon
  • Kombu (dried kelp) - 1 piece (about 5 cm)
  • Chopped green onions - 2 tablespoons
  • Toasted sesame seeds - 1 tablespoon

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear to remove excess starch.
  2. Soak the rinsed rice in water for 30 minutes, then drain.
  3. In a rice cooker or pot, combine the soaked rice, 200 milliliters of water, sea salt, and the piece of kombu.
  4. If using a rice cooker, set it to the 'white rice' setting and start cooking. If using a pot, bring to a boil over medium heat, then reduce to low, cover, and simmer for 15-20 minutes until the water is absorbed.
  5. Once cooked, let the rice sit covered for 10 minutes to steam.
  6. Remove the kombu, fluff the rice with a fork, and stir in the chopped green onions and toasted sesame seeds before serving.
