- Shijimi clams - 200 grams
- Dashi stock - 500 ml
- Miso paste (white or red) - 3 tablespoons
- Tofu (silken) - 100 grams, cubed
- Wakame seaweed (dried) - 2 tablespoons
- Green onions - 2 stalks, finely chopped
- Mirin - 1 tablespoon
- Soy sauce - 1 teaspoon
- Salt - to taste
Steps
- Rinse the shijimi clams under cold running water and soak them in fresh water for about 30 minutes to remove any sand.
- In a pot, bring the dashi stock to a gentle simmer over medium heat.
- Add the soaked clams to the pot and cover. Cook for about 5 minutes or until the clams have opened.
- Reduce the heat and remove the clams with a slotted spoon, then set aside.
- In a bowl, mix the miso paste with a ladleful of hot dashi stock until smooth, then stir this mixture back into the pot.
- Add the cubed silken tofu, wakame seaweed, mirin, and soy sauce to the pot. Simmer gently for another 2-3 minutes.
- Return the cooked clams to the pot and stir gently to combine. Taste and adjust seasoning with salt if needed.
- Serve hot, garnished with finely chopped green onions.
