Ingredients

  • Shijimi clams - 200 grams
  • Dashi stock - 500 ml
  • Miso paste (white or red) - 3 tablespoons
  • Tofu (silken) - 100 grams, cubed
  • Wakame seaweed (dried) - 2 tablespoons
  • Green onions - 2 stalks, finely chopped
  • Mirin - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Salt - to taste

Steps

  1. Rinse the shijimi clams under cold running water and soak them in fresh water for about 30 minutes to remove any sand.
  2. In a pot, bring the dashi stock to a gentle simmer over medium heat.
  3. Add the soaked clams to the pot and cover. Cook for about 5 minutes or until the clams have opened.
  4. Reduce the heat and remove the clams with a slotted spoon, then set aside.
  5. In a bowl, mix the miso paste with a ladleful of hot dashi stock until smooth, then stir this mixture back into the pot.
  6. Add the cubed silken tofu, wakame seaweed, mirin, and soy sauce to the pot. Simmer gently for another 2-3 minutes.
  7. Return the cooked clams to the pot and stir gently to combine. Taste and adjust seasoning with salt if needed.
  8. Serve hot, garnished with finely chopped green onions.
