- Zucchini - 1 medium, sliced into rounds
- Green onion - 2 stalks, cut into 5 cm lengths
- Soy sauce - 3 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Skewers (wooden or metal) - 4-6
Steps
- Soak wooden skewers in water for at least 15 minutes to prevent burning.
- In a bowl, combine soy sauce, maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger to make the marinade.
- Clean shiitake mushrooms and trim the stems, then add them to the marinade. Let them marinate for at least 10 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated shiitake mushrooms, bell pepper pieces, zucchini slices, and green onion onto the soaked skewers, alternating between vegetables.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and drizzle with any remaining marinade if desired. Serve hot.
