Ingredients

  • Shiitake mushrooms - 200 grams
  • Bell pepper (red or yellow) - 1 medium, cut into bite-sized pieces
  • Zucchini - 1 medium, sliced into rounds
  • Green onion - 2 stalks, cut into 5 cm lengths
  • Soy sauce - 3 tablespoons
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Skewers (wooden or metal) - 4-6

Steps

  1. Soak wooden skewers in water for at least 15 minutes to prevent burning.
  2. In a bowl, combine soy sauce, maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger to make the marinade.
  3. Clean shiitake mushrooms and trim the stems, then add them to the marinade. Let them marinate for at least 10 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated shiitake mushrooms, bell pepper pieces, zucchini slices, and green onion onto the soaked skewers, alternating between vegetables.
  6. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from the grill and drizzle with any remaining marinade if desired. Serve hot.
