Ingredients

  • Dried shiitake mushrooms - 50 grams
  • Soy sauce (kosher) - 60 ml
  • Mirin (kosher) - 30 ml
  • Sugar - 1 tablespoon (15 grams)
  • Sake (kosher) - 30 ml
  • Sesame oil - 1 teaspoon (5 ml)
  • Water - 200 ml

Steps

  1. Soak the dried shiitake mushrooms in 200 ml of water for about 15-20 minutes until they are soft. Drain and slice them thinly.
  2. In a small saucepan, combine the soy sauce, mirin, sugar, and sake. Stir to dissolve the sugar over low heat.
  3. Add the sliced shiitake mushrooms to the saucepan and bring the mixture to a simmer.
  4. Cook for about 10-15 minutes, stirring occasionally, until the liquid has thickened and the mushrooms are well coated.
  5. Remove from heat and stir in the sesame oil for added flavor.
  6. Allow the tsukudani to cool slightly before serving, either warm or at room temperature.
