- Dried shiitake mushrooms - 50 grams
- Soy sauce (kosher) - 60 ml
- Mirin (kosher) - 30 ml
- Sugar - 1 tablespoon (15 grams)
- Sake (kosher) - 30 ml
- Sesame oil - 1 teaspoon (5 ml)
- Water - 200 ml
Steps
- Soak the dried shiitake mushrooms in 200 ml of water for about 15-20 minutes until they are soft. Drain and slice them thinly.
- In a small saucepan, combine the soy sauce, mirin, sugar, and sake. Stir to dissolve the sugar over low heat.
- Add the sliced shiitake mushrooms to the saucepan and bring the mixture to a simmer.
- Cook for about 10-15 minutes, stirring occasionally, until the liquid has thickened and the mushrooms are well coated.
- Remove from heat and stir in the sesame oil for added flavor.
- Allow the tsukudani to cool slightly before serving, either warm or at room temperature.
