Ingredients

  • Shiitake mushrooms - 100 grams, sliced
  • Jasmine rice - 150 grams (about 3/4 cup)
  • Water - 300 ml (1 1/4 cups)
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Carrot - 1 small, diced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium-sized pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
  3. Add the sliced shiitake mushrooms and diced carrot to the pot. Cook for about 5 minutes until the mushrooms are tender.
  4. Add the rinsed rice to the pot and stir well to combine with the vegetables.
  5. Pour in the water, soy sauce, and mirin. Stir to combine and bring to a gentle boil.
  6. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. After 20 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
  8. Fluff the rice with a fork, then stir in the chopped green onions. Season with salt and black pepper to taste.
  9. Serve hot, garnished with additional green onions if desired.
