  • Carrot - 1 medium, julienned
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, for garnish
  • Salt - to taste

Steps

  1. Heat olive oil in a large pan or wok over medium heat.
  2. Add minced garlic and grated ginger, sautéing until fragrant (about 30 seconds).
  3. Add sliced shiitake mushrooms and stir-fry for 3-4 minutes until they start to soften.
  4. Incorporate the sliced bell pepper, broccoli florets, and julienned carrot, stirring continuously for another 5-7 minutes until the vegetables are tender but still crisp.
  5. Pour in the coconut aminos and sesame oil, tossing everything to coat evenly and cook for an additional 2 minutes.
  6. Season with salt to taste and remove the pan from heat.
