  • Shiitake mushrooms - 200 grams, sliced

  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh cilantro - 2 tablespoons, chopped
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced shiitake mushrooms to the skillet, cooking for about 5-7 minutes until they are tender and browned.
  4. Stir in the soy sauce and sesame oil, mixing well to combine with the mushrooms. Allow it to simmer for 2 minutes.
  5. Add the cooked spaghetti to the skillet, tossing everything together to ensure the pasta is well coated with the sauce.
  6. Remove from heat and stir in the chopped green onions and cilantro. If desired, sprinkle with red chili flakes for added heat.
