Ingredients

  • Dried shiitake mushrooms - 30 grams
  • Water - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Carrot - 1 medium, thinly sliced
  • Spinach - 100 grams, fresh
  • Sesame oil - 1 teaspoon
  • Sea salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried shiitake mushrooms in 250 ml of warm water for about 15 minutes until they are rehydrated. Drain and slice them thinly, reserving the soaking water.
  2. In a medium pot, combine the reserved soaking water and the remaining 250 ml of water. Bring to a gentle boil over medium heat.
  3. Add the sliced shiitake mushrooms, soy sauce, mirin, garlic, ginger, and sliced carrot to the pot. Reduce the heat and let it simmer for about 10 minutes until the carrots are tender.
  4. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  5. Drizzle the sesame oil into the soup and season with sea salt and black pepper to taste.
  6. Serve hot, garnished with sliced green onions.
