- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Spinach - 100 grams, fresh
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
Steps
- Bring a pot of water to a boil and cook the soba noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large skillet, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally until they are tender and browned.
- Pour in the vegetable broth, soy sauce, and mirin, bringing the mixture to a simmer. Allow it to cook for another 5 minutes.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt to taste.
- Add the cooked soba noodles to the skillet, gently tossing to combine all ingredients and heat through, about 2-3 minutes.
