- Dashi (vegetarian) - 100 ml
- Sugar - 10 grams
- Sesame oil - 5 ml
- Green onions - 2 stalks, chopped
- Toasted sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Clean the shiitake mushrooms by wiping them with a damp cloth and remove the stems.
- In a small saucepan, combine soy sauce, mirin, sake, dashi, and sugar. Heat over medium heat until the sugar dissolves, then bring to a simmer.
- Place the shiitake mushrooms in a baking dish and pour the sauce over them, ensuring they are well coated.
- Drizzle with sesame oil and sprinkle with chopped green onions.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, allowing the mushrooms to absorb the flavors and the sauce to thicken.
- Once done, remove from the oven, sprinkle with toasted sesame seeds, and serve warm.
