Ingredients

  • Shiitake mushrooms - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Sake - 15 ml
  • Dashi (vegetarian) - 100 ml
  • Sugar - 10 grams
  • Sesame oil - 5 ml
  • Green onions - 2 stalks, chopped
  • Toasted sesame seeds - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the shiitake mushrooms by wiping them with a damp cloth and remove the stems.
  3. In a small saucepan, combine soy sauce, mirin, sake, dashi, and sugar. Heat over medium heat until the sugar dissolves, then bring to a simmer.
  4. Place the shiitake mushrooms in a baking dish and pour the sauce over them, ensuring they are well coated.
  5. Drizzle with sesame oil and sprinkle with chopped green onions.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, allowing the mushrooms to absorb the flavors and the sauce to thicken.
  8. Once done, remove from the oven, sprinkle with toasted sesame seeds, and serve warm.
