- Butter - 30 grams
- All-purpose flour - 20 grams
- Milk - 200 ml
- Vegetable broth - 100 ml
- Grated cheese (e.g., mozzarella or cheddar) - 100 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Panko breadcrumbs - 30 grams
- Chopped parsley - 1 tablespoon, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, melt the butter over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sliced shiitake mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are tender.
- Sprinkle the flour over the mushroom mixture and stir well to combine, cooking for another 2 minutes.
- Gradually pour in the milk and vegetable broth, stirring constantly until the mixture thickens, about 3-5 minutes.
- Season the mixture with salt, black pepper, and a pinch of nutmeg, then remove from heat.
- Stir in half of the grated cheese until melted and well combined.
- Transfer the mushroom mixture into a small baking dish and evenly spread it out.
- In a separate bowl, mix the panko breadcrumbs with the remaining cheese and sprinkle it over the top of the mushroom mixture.
- Bake in the preheated oven for 25 minutes or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley and serving.
