Ingredients

  • Shiitake mushrooms - 200 grams, sliced

  • Butter - 30 grams
  • All-purpose flour - 20 grams
  • Milk - 200 ml
  • Vegetable broth - 100 ml
  • Grated cheese (e.g., mozzarella or cheddar) - 100 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Panko breadcrumbs - 30 grams
  • Chopped parsley - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, melt the butter over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and sliced shiitake mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are tender.
  4. Sprinkle the flour over the mushroom mixture and stir well to combine, cooking for another 2 minutes.
  5. Gradually pour in the milk and vegetable broth, stirring constantly until the mixture thickens, about 3-5 minutes.
  6. Season the mixture with salt, black pepper, and a pinch of nutmeg, then remove from heat.
  7. Stir in half of the grated cheese until melted and well combined.
  8. Transfer the mushroom mixture into a small baking dish and evenly spread it out.
  9. In a separate bowl, mix the panko breadcrumbs with the remaining cheese and sprinkle it over the top of the mushroom mixture.
  10. Bake in the preheated oven for 25 minutes or until the top is golden and bubbly.
  11. Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley and serving.
