- Spinach - 100 grams, fresh
- Greek yogurt - 100 grams
- Parmesan cheese - 30 grams, grated
- Panko breadcrumbs - 30 grams
- Olive oil - 1 tablespoon
- Soy sauce - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the sliced shiitake mushrooms to the skillet and cook for another 5 minutes, until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
