Ingredients

  • Shiitake mushrooms - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Spinach - 100 grams, fresh
  • Greek yogurt - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Panko breadcrumbs - 30 grams
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the sliced shiitake mushrooms to the skillet and cook for another 5 minutes, until softened.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Remove the skillet from heat and mix in the Greek yogurt, soy sauce, salt, and black pepper until well combined.
  6. Transfer the mixture into a small baking dish and spread it evenly.
  7. In a small bowl, combine the panko breadcrumbs and grated Parmesan cheese, then sprinkle the mixture over the top of the mushroom mixture.
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and crispy.
