Ingredients

  • Shiitake mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Miso paste - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Avocado - 1, sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2
  • Radish - 4, thinly sliced
  • Japanese mayo - 2 tablespoons

Steps

  1. Preheat your grill or a non-stick skillet over medium heat.
  2. In a bowl, combine shiitake mushrooms, olive oil, minced garlic, soy sauce, miso paste, and sesame oil. Mix well to coat the mushrooms evenly.
  3. Place the mushrooms on the grill or skillet and cook for about 5-7 minutes on each side, or until they are golden brown and tender.
  4. While the mushrooms are cooking, in a separate bowl, mix breadcrumbs, egg, salt, and black pepper until well combined.
  5. Once the mushrooms are done, chop them finely and add to the breadcrumb mixture. Form the mixture into two burger patties.
  6. Return the skillet to heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until they are crispy and golden.
  7. Toast the burger buns on the grill or in a toaster until golden brown.
  8. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the mushroom patty, avocado slices, cucumber, radish, and a drizzle of Japanese mayo.
  9. Top with the other half of the bun and serve immediately.
