Ingredients
- Shiitake mushrooms - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Miso paste - 1 tablespoon
- Sesame oil - 1 teaspoon
- Breadcrumbs - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Avocado - 1, sliced
- Cucumber - 1/2, sliced
- Lettuce leaves - 2
- Radish - 4, thinly sliced
- Japanese mayo - 2 tablespoons
Steps
- Preheat your grill or a non-stick skillet over medium heat.
- In a bowl, combine shiitake mushrooms, olive oil, minced garlic, soy sauce, miso paste, and sesame oil. Mix well to coat the mushrooms evenly.
- Place the mushrooms on the grill or skillet and cook for about 5-7 minutes on each side, or until they are golden brown and tender.
- While the mushrooms are cooking, in a separate bowl, mix breadcrumbs, egg, salt, and black pepper until well combined.
- Once the mushrooms are done, chop them finely and add to the breadcrumb mixture. Form the mixture into two burger patties.
- Return the skillet to heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until they are crispy and golden.
- Toast the burger buns on the grill or in a toaster until golden brown.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the mushroom patty, avocado slices, cucumber, radish, and a drizzle of Japanese mayo.
- Top with the other half of the bun and serve immediately.
