Ingredients

  • Shiitake mushrooms - 200 grams, sliced
  • Firm tofu - 150 grams, crumbled
  • Miso paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Panko breadcrumbs - 50 grams
  • Grated cheese (mozzarella or a vegan alternative) - 100 grams
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the crumbled tofu, miso paste, soy sauce, sesame oil, minced garlic, and half of the chopped green onions. Mix well until smooth.
  3. In a skillet over medium heat, sauté the sliced shiitake mushrooms for about 5 minutes until they are tender and slightly browned. Season with salt and black pepper.
  4. Add the sautéed mushrooms to the tofu mixture and stir until evenly combined.
  5. Transfer the mixture into a baking dish, spreading it out evenly.
  6. In a separate bowl, mix the panko breadcrumbs with grated cheese and the remaining green onions. Sprinkle this breadcrumb mixture evenly over the top of the tofu and mushroom layer.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
