- Shiitake mushrooms - 200 grams, sliced
- Firm tofu - 150 grams, crumbled
- Miso paste - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Panko breadcrumbs - 50 grams
- Grated cheese (mozzarella or a vegan alternative) - 100 grams
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the crumbled tofu, miso paste, soy sauce, sesame oil, minced garlic, and half of the chopped green onions. Mix well until smooth.
- In a skillet over medium heat, sauté the sliced shiitake mushrooms for about 5 minutes until they are tender and slightly browned. Season with salt and black pepper.
- Add the sautéed mushrooms to the tofu mixture and stir until evenly combined.
- Transfer the mixture into a baking dish, spreading it out evenly.
- In a separate bowl, mix the panko breadcrumbs with grated cheese and the remaining green onions. Sprinkle this breadcrumb mixture evenly over the top of the tofu and mushroom layer.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
