Ingredients

  • Japanese short-grain rice - 1 cup (200g)
  • Shiitake mushrooms - 100g, sliced
  • Water - 1.5 cups (360ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Mirin - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Green onions - 2, finely chopped
  • Salt - 1/2 teaspoon
  • Dried kombu (optional) - 1 piece (5cm)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, combine the rinsed rice, water, soy sauce, mirin, sesame oil, salt, and the piece of kombu if using.
  3. Add the sliced shiitake mushrooms to the saucepan and stir gently to combine.
  4. Bring the mixture to a boil over medium-high heat, then reduce to low heat and cover with a lid.
  5. Cook for 18-20 minutes, or until the rice is tender and has absorbed all the liquid.
  6. Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam.
  7. Fluff the rice with a fork, remove the kombu if used, and stir in the chopped green onions before serving.
