Ingredients
- Japanese short-grain rice - 1 cup (200g)
- Shiitake mushrooms - 100g, sliced
- Water - 1.5 cups (360ml)
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Sesame oil - 1 teaspoon (5ml)
- Green onions - 2, finely chopped
- Salt - 1/2 teaspoon
- Dried kombu (optional) - 1 piece (5cm)
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, combine the rinsed rice, water, soy sauce, mirin, sesame oil, salt, and the piece of kombu if using.
- Add the sliced shiitake mushrooms to the saucepan and stir gently to combine.
- Bring the mixture to a boil over medium-high heat, then reduce to low heat and cover with a lid.
- Cook for 18-20 minutes, or until the rice is tender and has absorbed all the liquid.
- Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam.
- Fluff the rice with a fork, remove the kombu if used, and stir in the chopped green onions before serving.
