- Mirin - 1 tablespoon
- Vegetable broth - 150 ml
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Scallions - 2, sliced
- Sesame seeds - 1 tablespoon, toasted
- Spinach - 100 grams, wilted
Steps
- In a medium saucepan, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced shiitake mushrooms to the pan and cook for 5-7 minutes, until they are tender and have released their moisture.
- Pour in the soy sauce, mirin, and vegetable broth, stirring to combine. Let the mixture simmer for 10 minutes to allow the flavors to meld.
- While the sauce is simmering, prepare the sushi rice according to package instructions if not already cooked.
- Once the sauce has thickened slightly, remove it from heat and stir in the wilted spinach until just combined.
- To serve, divide the cooked sushi rice into two bowls. Top each bowl with the shiitake and spinach mixture, and sprinkle with sliced scallions and toasted sesame seeds.
