Ingredients

  • Shiitake mushrooms - 200 grams, sliced
  • Cooked sushi rice - 200 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Vegetable broth - 150 ml
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Scallions - 2, sliced
  • Sesame seeds - 1 tablespoon, toasted
  • Spinach - 100 grams, wilted

Steps

  1. In a medium saucepan, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  2. Add the sliced shiitake mushrooms to the pan and cook for 5-7 minutes, until they are tender and have released their moisture.
  3. Pour in the soy sauce, mirin, and vegetable broth, stirring to combine. Let the mixture simmer for 10 minutes to allow the flavors to meld.
  4. While the sauce is simmering, prepare the sushi rice according to package instructions if not already cooked.
  5. Once the sauce has thickened slightly, remove it from heat and stir in the wilted spinach until just combined.
  6. To serve, divide the cooked sushi rice into two bowls. Top each bowl with the shiitake and spinach mixture, and sprinkle with sliced scallions and toasted sesame seeds.
