Ingredients

  • Dried shiitake mushrooms - 30 grams
  • Water - 600 milliliters
  • Kombu (dried kelp) - 10 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Scallions (green onions) - 2, chopped
  • Tofu (firm) - 100 grams, cubed
  • Salt - to taste

Steps

  1. In a medium pot, combine the dried shiitake mushrooms, kombu, and water. Let it soak for 15 minutes.
  2. After soaking, turn on the heat and bring the mixture to a gentle simmer. Allow it to simmer for 20 minutes.
  3. Remove the shiitake mushrooms and kombu from the pot. Slice the shiitake mushrooms thinly and set aside.
  4. Stir in the soy sauce and mirin into the dashi broth, then taste and adjust seasoning with salt if necessary.
  5. Add the cubed tofu and sliced shiitake mushrooms back into the broth, heating gently for another 2-3 minutes.
  6. Serve hot, garnished with chopped scallions.
