Ingredients

  • Shiitake mushrooms - 200 grams, chopped
  • Cooked quinoa - 100 grams
  • Rolled oats - 50 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a skillet, heat the sesame oil over medium heat and add the minced garlic and chopped shiitake mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and the moisture has evaporated.
  2. In a large bowl, combine the sautéed mushrooms, cooked quinoa, rolled oats, chopped green onion, soy sauce, miso paste, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Form the mixture into two burger patties. If the mixture is too wet, you can add a little more rolled oats to help bind it.
  4. Preheat a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  5. To assemble the burgers, place a lettuce leaf on each bun, followed by the cooked shiitake patty, slices of tomato, and avocado. Top with the other half of the bun.
  6. Serve immediately with your favorite vegan condiments or sides.
