Ingredients
- Shiitake mushrooms - 200 grams, chopped
- Cooked quinoa - 100 grams
- Rolled oats - 50 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Miso paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- In a skillet, heat the sesame oil over medium heat and add the minced garlic and chopped shiitake mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and the moisture has evaporated.
- In a large bowl, combine the sautéed mushrooms, cooked quinoa, rolled oats, chopped green onion, soy sauce, miso paste, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Form the mixture into two burger patties. If the mixture is too wet, you can add a little more rolled oats to help bind it.
- Preheat a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- To assemble the burgers, place a lettuce leaf on each bun, followed by the cooked shiitake patty, slices of tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite vegan condiments or sides.
