- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Tomatoes - 400 grams, crushed (canned or fresh)
- Miso paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Eggs - 4 large
- Fresh parsley - for garnish
- Steamed Japanese rice - 300 grams (cooked)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and diced red bell pepper, cooking for another 3-4 minutes until the peppers soften.
- Add the crushed tomatoes, miso paste, paprika, cumin, salt, and black pepper. Stir well and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
- Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- While the eggs are cooking, prepare the steamed rice according to package instructions if not already done.
- Once the eggs are cooked to your liking, remove the skillet from heat and garnish with fresh parsley.
- Serve the Shakshuka Tamago hot over a bed of steamed Japanese rice.
