Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Tomatoes - 400 grams, crushed (canned or fresh)
  • Miso paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 4 large
  • Fresh parsley - for garnish
  • Steamed Japanese rice - 300 grams (cooked)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and diced red bell pepper, cooking for another 3-4 minutes until the peppers soften.
  3. Add the crushed tomatoes, miso paste, paprika, cumin, salt, and black pepper. Stir well and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
  4. Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  5. While the eggs are cooking, prepare the steamed rice according to package instructions if not already done.
  6. Once the eggs are cooked to your liking, remove the skillet from heat and garnish with fresh parsley.
  7. Serve the Shakshuka Tamago hot over a bed of steamed Japanese rice.
