- onion - 1 medium, diced
- red bell pepper - 1, diced
- garlic - 2 cloves, minced
- canned diced tomatoes - 400 grams
- harissa paste - 1 tablespoon
- ground cumin - 1 teaspoon
- salt - to taste
- black pepper - to taste
- eggs - 4 large
- cooked Japanese short-grain rice - 400 grams (2 cups)
- fresh parsley - for garnish, chopped
- soy sauce - 1 tablespoon (for drizzling)
Steps
- In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the canned diced tomatoes, harissa paste, ground cumin, salt, and black pepper. Stir well, and let the mixture simmer for about 10 minutes until it thickens slightly.
- Use a spoon to create 4 small wells in the tomato mixture. Crack an egg into each well and cover the skillet. Cook for about 5-7 minutes or until the eggs are set to your liking.
- While the eggs are cooking, divide the cooked rice into two bowls.
- Once the eggs are done, carefully spoon the shakshuka mixture over the rice in each bowl.
- Garnish with chopped parsley and drizzle with soy sauce before serving.
