Ingredients

  • olive oil - 2 tablespoons
  • onion - 1 medium, diced
  • red bell pepper - 1, diced
  • garlic - 2 cloves, minced
  • canned diced tomatoes - 400 grams
  • harissa paste - 1 tablespoon
  • ground cumin - 1 teaspoon
  • salt - to taste
  • black pepper - to taste
  • eggs - 4 large
  • cooked Japanese short-grain rice - 400 grams (2 cups)
  • fresh parsley - for garnish, chopped
  • soy sauce - 1 tablespoon (for drizzling)

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the canned diced tomatoes, harissa paste, ground cumin, salt, and black pepper. Stir well, and let the mixture simmer for about 10 minutes until it thickens slightly.
  4. Use a spoon to create 4 small wells in the tomato mixture. Crack an egg into each well and cover the skillet. Cook for about 5-7 minutes or until the eggs are set to your liking.
  5. While the eggs are cooking, divide the cooked rice into two bowls.
  6. Once the eggs are done, carefully spoon the shakshuka mixture over the rice in each bowl.
  7. Garnish with chopped parsley and drizzle with soy sauce before serving.
