Ingredients

  • Firm tofu - 200 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 2 tablespoons
  • Bread crumbs - 1/2 cup
  • Green onions - 2 stalks, finely chopped
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Miso paste - 1 tablespoon
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then crumble it into a bowl.
  2. In a separate pan, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the crumbled tofu to the pan, along with soy sauce, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  4. Remove from heat and allow the mixture to cool slightly. Stir in the bread crumbs, sesame seeds, and chopped green onions until well combined.
  5. Form the mixture into two patties, ensuring they hold together well.
  6. In the same pan, add the remaining tablespoon of sesame oil and cook the patties over medium heat for about 4-5 minutes on each side, or until golden brown.
  7. To assemble the burgers, spread 1 tablespoon of vegan mayonnaise and 1 teaspoon of miso paste on each bun. Place a lettuce leaf, a slice of tomato, and a few cucumber slices on the bottom bun.
  8. Top with the cooked tofu patty, then close with the top bun and serve immediately.
