- Egg - 1 large
- Soy sauce - 1 tablespoon

- Green onions, chopped - 2 tablespoons
- Shiitake mushrooms, sliced - 100 grams
- Cooked chicken breast, shredded - 100 grams
- Red pepper flakes - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine cauliflower rice, shredded mozzarella cheese, cream cheese, and the egg. Mix until well combined.
- Add soy sauce, sesame oil, green onions, red pepper flakes, salt, and black pepper to the mixture, and stir until incorporated.
- Line a baking tray with parchment paper and spread the cauliflower mixture into a thin, even layer to form the pizza base. Bake in the preheated oven for 15 minutes until golden and firm.
- While the crust is baking, sauté the sliced shiitake mushrooms in a non-stick pan over medium heat until soft, about 5 minutes. Set aside.
- Once the crust is done, remove it from the oven and layer the sautéed mushrooms and shredded chicken evenly over the top.
- Sprinkle the remaining mozzarella cheese over the toppings.
- Place the nori sheets on top of the cheese layer, pressing down gently to adhere.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is bubbly and the nori is slightly crispy.
- Remove from the oven, slice, and serve hot.
