Ingredients

  • Nori sheets - 4 large
  • Cauliflower rice - 200 grams
  • Mozzarella cheese, shredded - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions, chopped - 2 tablespoons
  • Shiitake mushrooms, sliced - 100 grams
  • Cooked chicken breast, shredded - 100 grams
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine cauliflower rice, shredded mozzarella cheese, cream cheese, and the egg. Mix until well combined.
  3. Add soy sauce, sesame oil, green onions, red pepper flakes, salt, and black pepper to the mixture, and stir until incorporated.
  4. Line a baking tray with parchment paper and spread the cauliflower mixture into a thin, even layer to form the pizza base. Bake in the preheated oven for 15 minutes until golden and firm.
  5. While the crust is baking, sauté the sliced shiitake mushrooms in a non-stick pan over medium heat until soft, about 5 minutes. Set aside.
  6. Once the crust is done, remove it from the oven and layer the sautéed mushrooms and shredded chicken evenly over the top.
  7. Sprinkle the remaining mozzarella cheese over the toppings.
  8. Place the nori sheets on top of the cheese layer, pressing down gently to adhere.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is bubbly and the nori is slightly crispy.
  10. Remove from the oven, slice, and serve hot.
