Ingredients

  • Nori sheets - 2 sheets
  • Cooked quinoa - 150 grams
  • Chickpeas (canned, drained) - 100 grams
  • Grated carrot - 50 grams
  • Green onion (finely chopped) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Avocado (sliced) - 1/2
  • Cucumber (sliced) - 1/2
  • Leafy greens (like lettuce) - 1 cup
  • Wasabi mayo (store-bought or homemade) - 2 tablespoons

Steps

  1. Preheat a frying pan over medium heat and add a little oil.
  2. In a mixing bowl, mash the chickpeas with a fork until somewhat smooth.
  3. Add cooked quinoa, grated carrot, green onion, soy sauce, sesame oil, cornstarch, salt, and black pepper to the bowl. Mix until well combined.
  4. Cut each nori sheet into quarters and fold them into small squares.
  5. Form the quinoa-chickpea mixture into two patties, about 1.5 cm thick, and place a nori square in the center of each patty, pressing lightly.
  6. Cook the patties in the preheated frying pan for about 4-5 minutes on each side, or until golden brown and crispy.
  7. While patties are cooking, prepare the burger buns by toasting them lightly.
  8. Assemble the burgers by placing the patty on the bottom half of the bun, followed by leafy greens, sliced cucumber, sliced avocado, and a drizzle of wasabi mayo.
  9. Top with the other half of the bun and serve immediately.
