- Nori sheets - 2 sheets
- Cooked quinoa - 150 grams
- Chickpeas (canned, drained) - 100 grams
- Grated carrot - 50 grams
- Green onion (finely chopped) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cornstarch - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Avocado (sliced) - 1/2
- Cucumber (sliced) - 1/2
- Leafy greens (like lettuce) - 1 cup
- Wasabi mayo (store-bought or homemade) - 2 tablespoons
Steps
- Preheat a frying pan over medium heat and add a little oil.
- In a mixing bowl, mash the chickpeas with a fork until somewhat smooth.
- Add cooked quinoa, grated carrot, green onion, soy sauce, sesame oil, cornstarch, salt, and black pepper to the bowl. Mix until well combined.
- Cut each nori sheet into quarters and fold them into small squares.
- Form the quinoa-chickpea mixture into two patties, about 1.5 cm thick, and place a nori square in the center of each patty, pressing lightly.
- Cook the patties in the preheated frying pan for about 4-5 minutes on each side, or until golden brown and crispy.
- While patties are cooking, prepare the burger buns by toasting them lightly.
- Assemble the burgers by placing the patty on the bottom half of the bun, followed by leafy greens, sliced cucumber, sliced avocado, and a drizzle of wasabi mayo.
- Top with the other half of the bun and serve immediately.
