- Ramen noodles - 150 grams
- Water - 1 liter
- Shrimp - 100 grams, peeled and deveined
- Scallops - 100 grams, cleaned
- Fish fillet (Halal) - 100 grams, cut into bite-sized pieces
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Seaweed (nori) - 2 sheets, cut into strips
- Mushrooms (shiitake or button) - 100 grams, sliced
- Carrot - 1 small, julienned
- Baby bok choy - 2, halved
- Salt - to taste
- Pepper - to taste
Steps
- In a large pot, bring 1 liter of water to a boil. Add ramen noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.
- In the same pot, add sesame oil over medium heat. Sauté minced garlic and grated ginger until fragrant, about 1 minute.
- Add sliced mushrooms and carrots to the pot. Cook for an additional 3-4 minutes until vegetables are tender.
- Pour in the soy sauce and mirin, stirring to combine. Add shrimp, scallops, and fish fillet to the pot. Cook for 5-7 minutes, or until seafood is cooked through.
- Add baby bok choy and cook for another 2 minutes until wilted.
- Season with salt and pepper to taste.
- Divide the cooked ramen noodles into two bowls and ladle the seafood broth and vegetables over the noodles.
- Garnish with chopped green onions and strips of nori before serving.
