  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce (kosher) - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the Satsuma Imo thoroughly and cut it into bite-sized cubes.
  3. Place the sweet potato cubes on a baking sheet, drizzle with a bit of oil, and sprinkle with salt. Roast in the oven for 20-25 minutes or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, prepare the vegetables: slice the cucumber, julienne the carrot, and slice the red bell pepper.
  5. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, salt, and pepper to create the dressing.
  6. Once the sweet potatoes are done, let them cool slightly before adding them to a large mixing bowl with the sliced vegetables.
