Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and scrub the Satsuma Imo thoroughly to remove any dirt. Pat dry with a kitchen towel.
  3. Using a sharp knife or a mandoline, slice the sweet potatoes into thin, even rounds (about 2-3 mm thick).
  4. In a large bowl, toss the sweet potato slices with vegetable oil, sea salt, and rice vinegar until evenly coated.
  5. Spread the sweet potato slices in a single layer on a baking sheet lined with parchment paper.
  6. Sprinkle black sesame seeds over the slices for added flavor and texture.
