Satsuma-age is a delightful Japanese fish cake that is crispy on the outside and tender on the inside, making it a perfect snack or appetizer. This Paleo version uses fresh fish and vegetables for a healthy twist on a traditional favorite.

Ingredients
- White fish fillet (such as cod or pollock) - 200 grams
- Carrot - 50 grams, finely grated
- Green onion - 30 grams, finely chopped
- Sweet potato starch - 40 grams
- Egg - 1 large
- Sea salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - for frying
Steps
- In a food processor, add the white fish fillet and pulse until it becomes a smooth paste.
- Transfer the fish paste to a mixing bowl and add the grated carrot, chopped green onion, sweet potato starch, egg, sea salt, and black pepper. Mix until well combined.
- Heat a frying pan over medium heat and add enough coconut oil to cover the bottom.
- Using your hands, form small patties (about 5 cm in diameter) from the fish mixture and carefully place them in the hot oil.
- Fry the patties for about 3-4 minutes on each side, or until they are golden brown and cooked through.
- Once cooked, remove them from the pan and place them on a paper towel to absorb excess oil.
- Serve warm as a snack or appetizer.
