Ingredients

  • Satoimo (taro root) - 200 grams
  • Carrot - 1 medium, diced
  • Daikon radish - 100 grams, diced
  • Shiitake mushrooms - 50 grams, sliced
  • Green onions - 2, chopped
  • Vegetable broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Peel the satoimo and cut into bite-sized pieces.
  2. In a medium pot, heat sesame oil over medium heat.
  3. Add the diced carrot, daikon, and shiitake mushrooms to the pot. Sauté for about 5 minutes until the vegetables soften.
  4. Stir in the satoimo pieces and cook for another 3 minutes.
  5. Pour in the vegetable broth, soy sauce, and mirin. Bring the mixture to a boil.
  6. Reduce the heat and let it simmer for 15 minutes, or until the satoimo is tender.
  7. Season with salt and pepper to taste.
  8. Ladle the soup into bowls and garnish with chopped green onions before serving.
