Ingredients
- Satoimo (taro root) - 200 grams
- Cucumber - 1 medium, thinly sliced
- Carrot - 1 small, julienned
- Red bell pepper - 1/2, thinly sliced
- Green onion - 2, chopped
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
- Sesame seeds - 1 teaspoon
- Salt - to taste
Steps
- Peel the satoimo (taro root) and cut it into small cubes.
- In a pot, bring water to a boil and add the satoimo cubes. Cook for 15-20 minutes until fork-tender.
- Drain the satoimo and rinse under cold water to stop the cooking process. Allow it to cool down.
- In a large bowl, combine the cooled satoimo, cucumber, carrot, red bell pepper, and green onion.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and a pinch of salt.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle sesame seeds on top before serving.
