Ingredients

  • Satoimo (taro root) - 200 grams
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 small, julienned
  • Red bell pepper - 1/2, thinly sliced
  • Green onion - 2, chopped
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
  • Sesame seeds - 1 teaspoon
  • Salt - to taste

Steps

  1. Peel the satoimo (taro root) and cut it into small cubes.
  2. In a pot, bring water to a boil and add the satoimo cubes. Cook for 15-20 minutes until fork-tender.
  3. Drain the satoimo and rinse under cold water to stop the cooking process. Allow it to cool down.
  4. In a large bowl, combine the cooled satoimo, cucumber, carrot, red bell pepper, and green onion.
  5. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and a pinch of salt.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Sprinkle sesame seeds on top before serving.
