Ingredients

  • Satoimo (taro root) - 300 grams
  • Carrot - 1 medium (about 100 grams)
  • Konnyaku (konjac) - 100 grams
  • Dashi (vegetable stock) - 300 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2 for garnish

Steps

  1. Peel the satoimo and cut them into bite-sized pieces. Rinse under cold water to remove excess starch.
  2. Peel the carrot and slice it into thin rounds. Cut the konnyaku into bite-sized pieces and blanch in boiling water for 2 minutes, then drain.
  3. In a pot, heat the sesame oil over medium heat. Add the satoimo, carrot, and konnyaku, and sauté for about 5 minutes until slightly golden.
  4. Pour in the vegetable dashi, soy sauce, mirin, and sugar. Bring to a gentle boil, then reduce heat to low.
  5. Cover the pot and let it simmer for about 30 minutes, or until the satoimo is tender and the flavors meld.
  6. Serve hot, garnished with chopped green onions.
