- Satoimo (taro root) - 300 grams
- Carrot - 1 medium (about 100 grams)
- Konnyaku (konjac) - 100 grams
- Dashi (vegetable stock) - 300 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Green onions - 2 for garnish
Steps
- Peel the satoimo and cut them into bite-sized pieces. Rinse under cold water to remove excess starch.
- Peel the carrot and slice it into thin rounds. Cut the konnyaku into bite-sized pieces and blanch in boiling water for 2 minutes, then drain.
- In a pot, heat the sesame oil over medium heat. Add the satoimo, carrot, and konnyaku, and sauté for about 5 minutes until slightly golden.
- Pour in the vegetable dashi, soy sauce, mirin, and sugar. Bring to a gentle boil, then reduce heat to low.
- Cover the pot and let it simmer for about 30 minutes, or until the satoimo is tender and the flavors meld.
- Serve hot, garnished with chopped green onions.
