Ingredients

  • Satoimo (taro root) - 300 grams
  • Dashi stock - 300 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions (for garnish) - 1 tablespoon, chopped

Steps

  1. Peel the satoimo and cut them into large chunks, approximately 3-4 cm each.
  2. In a pot, combine the dashi stock, soy sauce, mirin, sake, and sugar. Bring to a gentle simmer over medium heat.
  3. Add the satoimo chunks to the pot and cover. Allow to simmer for about 20-25 minutes or until the satoimo is tender and easily pierced with a fork.
  4. Once cooked, remove from heat and let it sit for a few minutes to absorb flavors.
  5. Serve warm, garnished with chopped green onions.
