Ingredients

  • Salmon fillets - 2 x 150g
  • Soy sauce - 60ml
  • Mirin - 30ml
  • Brown sugar - 1 tablespoon (15g)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced for garnish
  • Sesame seeds - 1 tablespoon (optional)
  • Cooked rice - 300g (to serve)

Steps

  1. In a small bowl, mix together the soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger to create the teriyaki sauce.
  2. Heat a non-stick skillet over medium heat and add a little oil if necessary. Place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy.
  3. Flip the salmon fillets over and pour the teriyaki sauce over them. Cook for an additional 4-5 minutes, spooning the sauce over the fillets as they cook, until the salmon is opaque and flakes easily.
  4. Remove the skillet from heat and let the salmon rest for a minute. Serve the salmon over cooked rice, drizzled with the remaining teriyaki sauce, and garnish with sliced green onions and sesame seeds if desired.
