Ingredients
- Sushi rice - 200 grams
- Water - 250 ml
- Rice vinegar - 30 ml
- Sugar - 10 grams
- Salt - 5 grams
- Fresh salmon fillet - 150 grams
- Soy sauce - 15 ml
- Mirin - 10 ml
- Salmon roe (ikura) - 50 grams
- Nori (seaweed) - 1 sheet, cut into strips
- Chopped green onions - 2 tablespoons
Steps
- Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, combine the soaked rice with 250 ml of water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes, then remove from heat and let it sit, covered, for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this seasoning into the cooked rice and let it cool to room temperature.
- While the rice is cooling, prepare the salmon by cutting it into small cubes. Marinate the salmon cubes in a mixture of soy sauce and mirin for about 10 minutes.
- To assemble the dish, divide the seasoned rice into two bowls. Top each bowl with the marinated salmon cubes and a generous spoonful of ikura.
- Garnish with nori strips and chopped green onions before serving.
