Ingredients

  • Sushi rice - 200 grams
  • Water - 250 ml
  • Rice vinegar - 30 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Fresh salmon fillet - 150 grams
  • Soy sauce - 15 ml
  • Mirin - 10 ml
  • Salmon roe (ikura) - 50 grams
  • Nori (seaweed) - 1 sheet, cut into strips
  • Chopped green onions - 2 tablespoons

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, combine the soaked rice with 250 ml of water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes, then remove from heat and let it sit, covered, for 10 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this seasoning into the cooked rice and let it cool to room temperature.
  4. While the rice is cooling, prepare the salmon by cutting it into small cubes. Marinate the salmon cubes in a mixture of soy sauce and mirin for about 10 minutes.
  5. To assemble the dish, divide the seasoned rice into two bowls. Top each bowl with the marinated salmon cubes and a generous spoonful of ikura.
  6. Garnish with nori strips and chopped green onions before serving.
