Ingredients
- Glutinous rice - 100 grams
- Water - 150 ml
- Sugar - 30 grams
- Red bean paste (anko) - 50 grams
- Sakura (cherry blossom) leaves - 2 pieces
- Salt - a pinch
- Food coloring (optional) - a few drops
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the rice and add it to a rice cooker with 150 ml of fresh water. Cook until the rice is tender and sticky.
- Once the rice is cooked, transfer it to a bowl and mix in 30 grams of sugar and a pinch of salt while it's still warm. If desired, add a few drops of food coloring to achieve a light pink hue.
- Wet your hands with water to prevent sticking, then take a portion of the rice (about 50 grams) and flatten it in your palm.
- Place a small amount (about 10 grams) of red bean paste in the center of the flattened rice and carefully fold the rice around it, shaping it into a ball or oval.
- Repeat the process for the remaining rice and filling.
- Soak the sakura leaves in warm water for a few minutes to soften them, then pat dry.
- Wrap each mochi in a sakura leaf, ensuring the leaf is slightly salty to complement the sweetness of the mochi.
- Serve the Sakura Mochi at room temperature.
