  • Spring onions - 2, finely chopped
  • Shiitake mushrooms - 50 grams, sliced
  • Spinach - 50 grams, fresh
  • Sesame oil - 1 teaspoon
  • Soy sauce - 1 teaspoon

Steps

  1. In a medium saucepan, bring the dashi stock to a gentle simmer over medium heat.
  2. Once the stock is simmering, whisk in the white miso paste until fully dissolved.
  3. Add the salted sakura petals and sliced shiitake mushrooms to the pot, cooking for about 5 minutes until the mushrooms are tender.
  4. Gently add the cubed silken tofu and spinach to the soup, allowing them to heat through for an additional 3-4 minutes.
  5. Stir in the finely chopped spring onions, sesame oil, and soy sauce, then remove the soup from heat.
