Ingredients

  • Sushi rice - 150 grams
  • Water - 300 ml
  • Sakura (cherry blossom) pickles - 30 grams
  • Carrot - 1 medium, finely diced
  • Green peas - 50 grams (fresh or frozen)
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Chopped green onions - 2 tablespoons
  • Nori (seaweed) - 1 sheet, cut into strips for garnish

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the soaked rice and combine it with 300 ml of fresh water in a rice cooker or a pot.
  3. Add the salt and bring to a boil over medium heat if using a pot. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
  4. Remove the pot from heat and let it sit covered for another 10 minutes to steam the rice.
  5. In a small pan, heat the sesame oil over medium heat. Add the diced carrot and sauté for 3-4 minutes until slightly softened.
  6. Stir in the green peas and continue to cook for another 2 minutes.
  7. Add the sautéed vegetables, sakura pickles, and soy sauce to the cooked rice. Gently fold everything together to combine without mashing the rice.
  8. Serve the Sakura Gohan in bowls, garnished with chopped green onions and strips of nori.
