Sakura Gohan

Ingredients
- Sushi rice - 150 grams
- Water - 300 ml
- Sakura (cherry blossom) pickles - 30 grams
- Carrot - 1 medium, finely diced
- Green peas - 50 grams (fresh or frozen)
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Chopped green onions - 2 tablespoons
- Nori (seaweed) - 1 sheet, cut into strips for garnish
Steps
- Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the soaked rice and combine it with 300 ml of fresh water in a rice cooker or a pot.
- Add the salt and bring to a boil over medium heat if using a pot. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
- Remove the pot from heat and let it sit covered for another 10 minutes to steam the rice.
- In a small pan, heat the sesame oil over medium heat. Add the diced carrot and sauté for 3-4 minutes until slightly softened.
- Stir in the green peas and continue to cook for another 2 minutes.
- Add the sautéed vegetables, sakura pickles, and soy sauce to the cooked rice. Gently fold everything together to combine without mashing the rice.
- Serve the Sakura Gohan in bowls, garnished with chopped green onions and strips of nori.
