Ingredients

  • Ground chicken - 250 grams
  • Sakura (cherry blossom) petals - 2 tablespoons (dried)
  • Gluten-free breadcrumbs - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (gluten-free) - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Rice flour - for dusting
  • Lettuce leaves - 2 large
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Wasabi mayonnaise - 4 tablespoons (mix wasabi paste with mayonnaise)
  • Gluten-free burger buns - 2

Steps

  1. In a mixing bowl, combine ground chicken, sakura petals, gluten-free breadcrumbs, egg, minced garlic, grated ginger, soy sauce, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two equal burger patties, dusting them lightly with rice flour.
  3. Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook the burger patties for about 6-7 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the burger buns by lightly toasting them in another skillet, if desired.
  5. Assemble the burgers: place a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and cucumber. Top with wasabi mayonnaise before closing the burger with the top half of the bun.
  6. Serve immediately with a side of your choice.
