Ingredients
- Jasmine rice - 150 grams
- Sake - 100 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Dried shiitake mushrooms - 4 pieces
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Salt - to taste
- Water - 300 ml
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a small bowl, combine sake, soy sauce, and mirin. Set aside.
- Soak the dried shiitake mushrooms in hot water for 15 minutes until rehydrated. Slice them thinly.
- In a pan, heat sesame oil over medium heat. Add the rehydrated mushrooms, carrot, and zucchini. Sauté for about 5 minutes until slightly tender.
- Add the sake mixture to the sautéed vegetables and simmer for another 5 minutes until the liquid reduces slightly.
- In a rice cooker or saucepan, drain the soaked rice and add it to 300 ml of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer for 15 minutes with a lid on.
- Once the rice is cooked, fluff it with a fork and gently fold in the sautéed vegetable mixture.
- Serve warm, garnished with chopped green onions and adjust salt to taste.
