Ingredients

  • Jasmine rice - 150 grams
  • Sake - 100 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Dried shiitake mushrooms - 4 pieces
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Water - 300 ml

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a small bowl, combine sake, soy sauce, and mirin. Set aside.
  3. Soak the dried shiitake mushrooms in hot water for 15 minutes until rehydrated. Slice them thinly.
  4. In a pan, heat sesame oil over medium heat. Add the rehydrated mushrooms, carrot, and zucchini. Sauté for about 5 minutes until slightly tender.
  5. Add the sake mixture to the sautéed vegetables and simmer for another 5 minutes until the liquid reduces slightly.
  6. In a rice cooker or saucepan, drain the soaked rice and add it to 300 ml of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer for 15 minutes with a lid on.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed vegetable mixture.
  8. Serve warm, garnished with chopped green onions and adjust salt to taste.
