Ingredients

  • Salmon fillets - 250 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Sesame oil - 1 teaspoon
  • Broccoli florets - 100 grams
  • Carrot - 1 medium, sliced
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. In a small bowl, mix together soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic to create the teriyaki sauce.
  2. Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them, letting them marinate for at least 15 minutes.
  3. While the salmon is marinating, bring a pot of water to a boil and steam the broccoli and carrot until tender, about 5-7 minutes.
  4. Heat sesame oil in a non-stick skillet over medium heat. Remove the salmon from the marinade and cook in the skillet for 4-5 minutes on each side until cooked through and slightly caramelized.
  5. In the same skillet, pour the remaining teriyaki sauce and cook for an additional minute until thickened.
  6. Serve the salmon on plates, drizzled with the teriyaki sauce, alongside the steamed vegetables. Garnish with chopped green onions and sesame seeds.
