Ingredients

  • Salmon fillets - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 60 ml
  • Sake - 60 ml
  • Sugar - 1 tablespoon (15 grams)
  • Ginger - 1 tablespoon, grated
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Water - 120 ml

Steps

  1. In a medium saucepan, combine soy sauce, mirin, sake, sugar, grated ginger, and water. Stir well and bring to a simmer over medium heat.
  2. Once the sauce is simmering, carefully place the salmon fillets into the saucepan, skin side down.
  3. Reduce the heat to low, cover the saucepan, and let the salmon simmer for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  4. Carefully remove the salmon from the pan and place it on serving plates.
  5. Increase the heat to medium-high and let the sauce reduce for about 5 minutes until it thickens slightly.
  6. Drizzle the reduced sauce over the salmon fillets, and garnish with chopped green onions and toasted sesame seeds before serving.
