- Salmon fillet - 200 grams
- Japanese short-grain rice - 150 grams
- Water - 300 ml
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sake - 2 tablespoons
- Green onions - 2 stalks, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
- Ground black pepper - to taste
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice and 300 ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes, or until the water is absorbed and the rice is tender.
- While the rice is cooking, season the salmon fillet with salt and ground black pepper.
- In a non-stick skillet, heat the sesame oil over medium-high heat. Add the salmon fillet and cook for about 4-5 minutes on each side until golden and cooked through.
- In a small bowl, mix the soy sauce, mirin, and sake. Pour this mixture over the cooked salmon in the skillet and let it simmer for another 2-3 minutes, basting the salmon with the sauce.
- Once the rice is done, fluff it with a fork and divide it between two bowls. Place the glazed salmon on top of the rice.
- Garnish with chopped green onions and serve immediately.
