Ingredients

  • Salmon fillet - 200 grams
  • Japanese short-grain rice - 150 grams
  • Water - 300 ml
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sake - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Ground black pepper - to taste

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine the soaked rice and 300 ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes, or until the water is absorbed and the rice is tender.
  3. While the rice is cooking, season the salmon fillet with salt and ground black pepper.
  4. In a non-stick skillet, heat the sesame oil over medium-high heat. Add the salmon fillet and cook for about 4-5 minutes on each side until golden and cooked through.
  5. In a small bowl, mix the soy sauce, mirin, and sake. Pour this mixture over the cooked salmon in the skillet and let it simmer for another 2-3 minutes, basting the salmon with the sauce.
  6. Once the rice is done, fluff it with a fork and divide it between two bowls. Place the glazed salmon on top of the rice.
  7. Garnish with chopped green onions and serve immediately.
