Sake Gohan

Ingredients
- Japanese short-grain rice - 150 grams
- Sake - 100 ml
- Water - 200 ml
- Carrot - 1 medium, diced
- Shiitake mushrooms - 100 grams, sliced
- Green peas - 50 grams (fresh or frozen)
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Spring onion - 2, chopped
- Salt - to taste
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the sesame oil over medium heat and add the diced carrot and sliced shiitake mushrooms. Sauté for about 3-4 minutes until slightly softened.
- Add the rinsed rice to the pot and stir for 2 minutes until the rice is well-coated with the oil and vegetables.
- Pour in the sake, water, soy sauce, and mirin. Stir gently to combine and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 15 minutes.
- After 15 minutes, add the green peas on top of the rice without stirring. Cover again and cook for an additional 5 minutes.
- Turn off the heat and let the rice sit, covered, for another 10 minutes to allow it to steam.
- Fluff the rice with a fork, mix in the chopped spring onions, and season with salt to taste before serving.
