Ingredients

  • Whole fish (e.g., mackerel or sea bass) - 2 (about 250g each)
  • Sea salt - 1 tablespoon
  • Lemon - 1, sliced
  • Fresh parsley or shiso leaves - for garnish
  • Cooking oil - 1 teaspoon (for greasing grill)

Steps

  1. Rinse the whole fish under cold water and pat dry with paper towels.
  2. Rub the sea salt evenly inside and outside the fish, ensuring it is well coated. Let it sit for about 15 minutes to absorb the salt.
  3. Preheat your grill or a grill pan over medium-high heat.
  4. Lightly grease the grill with cooking oil to prevent sticking.
  5. Place the fish on the grill and cook for about 6-8 minutes on each side, or until the skin is crispy and the flesh flakes easily with a fork.
  6. During the last few minutes of grilling, place lemon slices on top of the fish to infuse flavor.
  7. Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
  8. Garnish with fresh parsley or shiso leaves and serve with additional lemon slices on the side.
