Ingredients

  • White fish fillets (such as cod or snapper) - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Sugar - 1 tablespoon (15 grams)
  • Ginger (sliced) - 1 piece (about 10 grams)
  • Green onions (sliced) - 1 stalk
  • Water - 200 ml
  • Sesame oil - 1 teaspoon (5 ml)

Steps

  1. In a medium saucepan, combine soy sauce, mirin, sake, sugar, sliced ginger, and water. Stir well to dissolve the sugar.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Add the white fish fillets to the saucepan, ensuring they are submerged in the liquid.
  4. Cover the saucepan and simmer for about 15-20 minutes, spooning the sauce over the fish occasionally, until the fish is cooked through and flakes easily.
  5. Once cooked, carefully transfer the fish to a serving plate.
  6. Increase the heat to reduce the sauce for an additional 5 minutes, if desired, to concentrate the flavors.
  7. Drizzle sesame oil over the fish and garnish with sliced green onions before serving.
