Ingredients

  • Saba (mackerel) - 200 grams
  • Soy sauce (halal) - 2 tablespoons
  • Mirin (halal) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Cooked Japanese rice - 1 cup (200 grams)
  • Water - 1/2 cup (120 ml)
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 teaspoon
  • Salt - 1/2 teaspoon

Steps

  1. In a bowl, combine soy sauce, mirin, rice vinegar, and salt to create a marinade for the mackerel.
  2. Cut the mackerel into fillets and place them in the marinade for at least 15 minutes.
  3. While the fish is marinating, rinse the rice under cold water until the water runs clear, then drain.
  4. In a rice cooker or pot, combine the rinsed rice with 1/2 cup of water and cook according to the rice cooker instructions or bring to a boil on the stove, then reduce heat and simmer for 15 minutes.
  5. After 15 minutes, remove the mackerel from the marinade and grill or pan-fry on medium heat for about 5-7 minutes on each side until cooked through.
  6. Once the rice is done, fluff it with a fork and serve it in bowls.
  7. Top the rice with the grilled mackerel, chopped green onions, and sprinkle sesame seeds on top.
